A look back over the gustatory trends of 2018

THE DINING scene in Bangkok is constantly evolving, with new trends being set and others falling by the wayside.

One of those new trends in 2018 was the rise of the degustation menu that saw chefs of Thai, Chinese, Indian, Japanese and Western cuisine creatively turning classic and comfort dishes towards fancy presentations.

The sustainable approach and farm-to-table movement that has been in the works for some time continues to respond to diners’ concerns of where the food we eat comes from, how it is grown and produced and the ingredients that are used.

And the spotlight has also shone brightly on female chefs. Of the 27 starred restaurants in the second edition of “Michelin Guide Bangkok”, the kitchens of eight of them are under the baton of a woman.

The rise of the degustation menu

Growing in popularity among diners, tasting menus offer a small sampling of the chef’ specialities over a number of courses. At the launch of the second edition of the “Michelin Guide Bangkok” last month, Gwendal Poullennec, international director of the guidebooks, made mention of the move towards degustation, saying “we have also seen a trend in the degustation menu, whereby chefs design a complete experience for diners”.

Mei Jiang brings modern flair to Chinese tradition with the introduction of a degustation menu.

Though its crowd-pleasing a la carte menu remains unchanged so far, the famed Chinese restaurant Mei Jiang at the Peninsula Bangkok has for the first time since it opened 20 years ago introduced a 16-course degustation menu prepared by its new Chinese cuisine executive chef Ball Yau.

This, says Yau, is a splendid way of introducing himself to the regulars and a great chance for them to try unfamiliar dishes served in tasting portions.

Braised wagyu beef brisket rolls in beef soup

The 40-year-old chef tries to integrate Chinese culinary tradition with contemporary flair and innovative presentation. His modern version of Chinese-style mixed vegetable stew has a whole organic cocktail tomato filled with braised mixed vegetables and dressed with pumpkin sauce. His braised M6-score wagyu beef brisket is wrapped in thin slices of turnip, all this in beef soup.

Local organic duck at Elements

The one-starred Michelin Elements restaurant at the Okura Prestige Bangkok, which is known for its gourmet French cuisine with seasonal Japanese influences, has also offered new tasting menus, developed in collaboration with the chefs at the two-starred Michelin restaurant Ciel Bleu of its sister property Okura Amsterdam.

“I believe tasting menus are becoming increasingly popular because chefs want to offer patrons the chance to experience their signature dishes as part of the dining experience,” said Element’s executive chef Alvaro Roa. “Our new tasting menu can be likened to a culinary journey that tells the story of exceptional seasonal produce prepared with French savoir-faire and Japanese twists. Moreover, from a practical point of view, a tasting menu is an efficient way for the kitchen operation to ensure that all dishes served to our guest are consistently of a superior quality.”

Tofu is the star ingredient in the omakase-style, multicourse dining experience at Mihara Tofuten

Bean curd has never been so appealing as it is in the fine-dining creations of the new restaurant Mihara Tofuten – Bangkok’s first eatery dedicated to bean curd. This basic ingredient can be elevated for luxurious omakase-style dining, in which the chefs decide what to serve rather than filling guests’ orders. The eatery offers a 12-course degustation dinner menu with 16 items and a six-course sampler for lunch.

Deep-fried Zaru Tofu

“Diners today are more open-minded and discerning and they regularly follow the Instagram feeds of influencers and food gurus to discover the trends in dining out culture. If Mihara Tofuten had opened five years ago, it would not have been a success. Today people prefer something special and unique and restaurants with mastery in speciality cuisine are evidence of the popularity of omakase-style sushi restaurants in Bangkok,” said food critic Kittidech Vimolratana, who is known as @itan on Instagram, and is a co-owner of Mihara Tofuten.

Tofu Ice Cream, Tofu Blancmange and Tofu Chocolates

At the restaurant, cold gazpacho is reinterpreted with a tofu-centric presentation with tofu miso topped with jelly made with shrimp broth, diced tomato and zucchini and a morsel of Kuruma shrimp. The dessert list offers tofu ice cream, tofu blancmange with a shot of espresso and four chilled tofu chocolates in four flavours – pistachio, rum raison, cacao and matcha.

“Diners are willing to pay if what they get is value for money (the degustation dinner menu costs Bt4,900) and explores new dining experiences like nowhere. Thais also love to sample a variety of tastes and the degustation menu meets those needs,” added Kittidech.

Thai Samrum Tri “Local Wisdom Thai Cuisine” – Korat Wagyu beef spicy consomme at R.Haan

Thai restaurants including R.Haan, Saawaan, Le Du and Sorn, each of which earned one Michelin star this year, also offer degustation menus.

R.Haan run by celebrated chef Chumpol Jangprai of R.Haan offers a choice of three seasonal samrub (a set of shared dishes), each made up of multicourse items based on ancient recipes but in attractive new presentations.

“We want people to sample a variety of dishes with different tastes made from carefully selected seasonal ingredients and enjoy a new dining experience. Pairing different items in one samrub is local wisdom. The different flavours don’t only complement each other, but also cater to family members of different ages,” Chumpol told The Nation a few months back.

Yum naem kao tod

Sujira Pongmorn, chef de cuisine at the new restaurant Saawaan, elevates Thai street food in multi-course offerings while maintaining authentic flavours.

Her yum naem kao tod (spicy salad with pickled sausage and crispy-fried curried rice) comes in a totally new look with house-fermented beef brisket, crispy-fried curried rice, pickled cucumber slices and fried ginger.

Run by rising star Thitid “Ton” Tassanakajohn, Le Du has four- and six-course tasting menus based on seasonal produce and sustainable local ingredients. He offers a new take on kao khulk kapi, cooking organic rice with aromatic shrimp paste and pork jam and serving it with grilled river prawn on the side.

Green destinations

Many restaurants have pursued the sustainable and farm-to-table concept this year, among them Haoma in downtown Bangkok, which has committed to becoming zero-waste by the end of next year.

Pla nil, a fish highly recommended by King Bhumibol, is cultivated in constantly recycling rainwater at Haoma.

Operated by Deepanker “DK” Khosla from India, Haoma has its own backyard with an integrated “aquaponics” system where fish and plants grow together as well as a four-rai farm in Chiang Mai that supplies ingredients for his farm-to-table meals. Whatever food waste emanates from the kitchen ends up in the fishes’ bellies and then the fish waste fertilises the plants, which in exchange filter the water in which the fish live.

“We’ve already reduced about 80 per cent of the waste and the rest depends on our suppliers. We’ll stop using suppliers who use diesel trucks – they have to run on CNG [compressed natural gas]. And we give our vegetable suppliers cotton bags to use for deliveries so there’s no need for plastic. The meat we get in recyclable containers,” said Khosla.

Pru’s own farm grows organic vegetables and herbs and raises freerange chickens and ducks.

The farm-to-table restaurant Pru at Trisara Phuket, the first and only restaurant in Phuket to earn one Michelin star in the second edition of “Michelin Guide Bangkok” which has expanded its entries to include Phuket and Phang Nga, is based on a “Plant, Raise, Understand” concept.

Pru has its own farm, Pru Jampa, to grow organic vegetables and herbs and raise free-range chickens and ducks. Pru’s chef de cuisine Jim Ophorst and his team also work closely with local suppliers and farmers whose methods are certified as environmentally and ethically responsible.

Burned leek with wild mushrooms

“My ultimate goal is to create a 100-per-cent locally sourced menu. To cook something great, you need great products from great farmers. Great farmers are from strong communities. So, at Pru, we don’t want to be just a kitchen. We want to strengthen the local farmer community. This will yield better ingredients for better dishes,” Ophorst enthused.

Based on the idea of “happy supply chain”, new restaurant Charna at Siam Center relies wholly on certified-sustainable producers for its menus ranging from hot pot, grill, salad and appetiser, to drink and dessert.

More than 30 different vegetables and herbs are on offer at the Farm Station at Charna.

The seafood comes from the Save Our Fish-Save Our Sea Network, the only network of Thai fishermen recognised with the Organic Agriculture Certification of Thailand. The pork is from Green Pork@Ratchaburi, a farm that produces meat free of antibiotics, vaccines and growth hormones, while many of the organic and toxin-free vegetables come from the Jon Non Rai and Boon Chaluay farms in Nakhon Ratchasima.

The Cold-pressed Juice Station

The menu even has QR codes for the main producers that, when scanned with a phone, reveals more information about them.

“We want to pinpoint where the food comes from, how it’s grown or produced and what ingredients are used,” said Panadda Ritthiruengdej, public relations manager at Food Passion that operates the restaurant. “The principle is environmental sustainability. We should learn about the produce and the producers and be able to recognise their real value.”

Women power

Supinya “Jay Fai” Junsuta, 72, owner of streetside eatery Jay Fai, has become well-known on both the local and international dining scenes and retained her one Michelin star rating this year. Jay Fai is the only street venue in Bangkok to earn this coveted award.

Jay Fai (Photo:EPA-EFE)

Diners still queue at her small shophouse with just seven tables in the Pratu Phee area and order the dishes suggested in the Michelin guide, namely crabmeat omelette and stir-fried crab curry.

Of the 27 starred restaurants in the second edition of “Michelin Guide Bangkok”, the kitchens of eight of them are under the baton of a woman.

From the total 27 starred restaurants in the second edition, eight boast female chefs –Jay Fai, Sujira of Saawaan, Bo Songvisava of Bo.lan, Garima Arora from Gaa, Pim Techamuanvivit of Nahm, Bee Satongun of Paste, Banyen Ruangsantheia from Suan Thip, and Pannee Ganisthanaka of Ruean Panya.

Another attractive restaurant, Front Room at the newly opened Waldorf Astoria Bangkok, is also manned by a female Thai chef. Rungthiwa “Fae” Chummongkhon is introducing a Thai-inspired Nordic approach to a menu with complex flavours that will immediately be familiar to the Thai palate.

Rungthiwa Chummongkhon directs the kitchen of Front Room that offers a Nordic take on Thai recipes and ingredients.

“It’s a challenging job, especially as Scandinavian-style dishes are usually prepared by foreign chefs. I want to show that a Thai chef, particularly a woman, can do it too. I believe Thais have the palate to absorb the complex flavours of sour, sweet, salty and spicy and that is an advantage when it comes to being a good chef,” said Rungthiwa.

The new menu at Praya Dining traces the delicious history of Thai food from the Sukhothai era through to today

ACCESSIBLE ONLY by boat, Praya Palazzo – a hotel housed in a century-old Italo-Thai mansion on the Thon Buri bank of the Chao Phraya River – has now reopened following several months of renovations.

Built in 1923 during the reign of King Rama VI, the mansion originally belonged to Praya Chollabhumipanish – a noble of the Royal Court Custom Department – and was known as Baan Bang Yee Khan. After World War II, it was used as two schools then had left abandoned for over a decade since 1996.

Praya Palazzo

The decaying mansion was given a new lease of life by late architect Wichai Pitakworrarat and was reborn as Praya Palazzo in 2009 before being acquired by Montara Hospitality, which owns and operates Trisara Phuket and Prince Theatre Heritage Stay in Bangkok, late last year.

Praya Dining at Praya Palazzo relaunches with an exquisite culinary journey that takes the diner through the history of Siam.

The restaurant Praya Dining is also open again with the menu revamped to track the origins of Siamese cuisine from the Sukhothai era (1238-1438), the Ayutthaya (1351-1767) to the Rattanakosin period (1782-today). The dishes chosen to represent each period are based on both studies and assumptions.

The restaurant is elegant with wooden floors and dark red walls and the vintage furniture and decorative items add to its classic charm.

The savoury dip lon pla kem (salted mackerel relish with vegetables, Bt290) represents the way of life in the Sukhothai era. History tells us that rice and fish were the staples and that the people ate simple dishes based around rice, shrimp paste, fish and vegetables ground together in a mortar. Meat, particularly beef, was not popular because it needed too much firewood for cooking. Lon pla kem combines smoked dry fish, minced pork and shrimp paste, which are slowly simmered in rich coconut cream and served with an assortment of vegetables and small crispy fish.

Ingredients like cilantro, peanuts and spices came into play in the Ayutthaya Kingdom as trade with foreign countries like Portugal, Persia and China flourished. People began to eat pork thanks to the influence of Chinese cuisine and the Chinese cooking techniques of stir-frying and frying were introduced.

Kung sarong

The appetiser representing this period is kung sarong (deep-fried prawns wrapped with vermicelli noodles, Bt280) while the main dish is kamon jeen nam ya pla (thin rice noodles with snake-head fish, Bt290), a tempting fish curry served with bean sprout, chopped cucumber and long bean.

Kamon jeen nam ya pla

The appetiser known as la tiang (Bt250) gets a mention in the poem “Kap He Chom Krueang Khao Wan” (“Verse of Food and Dessert”) composed by King Rama II in the Rattanakosin era and is prepared here according to the centuries-old recipe. It comprises minced pork, shrimp and roasted peanuts seasoned with pepper, fish sauce and coconut palm sugar wrapped in egg mesh.

 La tiang

Another appetiser, kratong thong (seasoned minced chicken with corn seed, green pea and chopped carrot, Bt190) is based on a dish introduced during the reign of King Rama IV who embraced Western innovations and initiated the modernisation of Siam.

Kratong thong

Many dishes are made according to the royal recipes from the reign of King Rama V but with a slight twist while others follow the recipes from a centuries-old cookbook written by Mom Somjeen Rachanupraphan.

Mee krob

Among the starters are mee krob (crispy vermicelli with tamarind sauce, Bt290) andsang wa kung pla duk fu (grilled and chopped prawns dip with crispy catfish salad, Bt380).

“We use grilled river prawns for the dip and the deep-fried fluffy crispy catfish is made from 100-per-cent catfish meat without any flour,” says Neerapha Wongnikorn, the executive assistant manager.

 Gaeng run juan

Thought to have originated in the palace of King Rama V, gaeng run juan (hot and spicy soup, Bt350) features leftover shrimp-paste dip cooked in a broth of pork (the original version uses beef), lemongrass, onion, holy basil, garlic and chilli.

Mu pad som siew

Another main dish is mu pad som siew (Bt350) for which the local som siew leaf – largely found in the North and Northeastern regions – is crushed to extract its unique sour taste then mixed into the curry paste before stir-frying with pork.

“The actual origin of the dish is hard to trace though it is believed that Princess Sukhumala Marasri, a royal consort of King Rama V, visited Wat Som Siew in Nakhon Sawan and was impressed by the fragrance of the som siew plants grown around the temple. Legend has it that she brought the leaves back to the palace and started to cook them in a yellow curry,” Neerapha explains.

Kung mae nam pao kab sadao wan

“One of King Rama V’s favourite dishes was said to be kung mae nam pao kab sadao wan (grilled river prawn served with neem leaves and tamarind dip, Bt690) because it was easy-to-prepare while he was travelling by water.”

SIAMESE SENSATIONS

Praya Dining at Praya Palazzo hotel is open daily from 11am to 10.30pm.

The hotel’s shuttle boat provides a service to and from Tha Phra Arthit pier or Rajathiwas Temple pier (Soi Samsen 9) where parking is available.

Revered Israeli writer Amos Oz dies at 79

Renowned Israeli writer Amos Oz, a passionate peace advocate whose stirring memoir “A Tale of Love and Darkness” became a worldwide bestseller, died on Friday aged 79, his daughter said.

Fania Oz-Salzberger said on Twitter that her father had died and offered thanks to “those who loved him”.

“My beloved father, Amos Oz, a wonderful family man, an author, a man of peace and moderation, died today peacefully after a short battle with cancer,” she wrote.

Tributes poured in for Oz, including from Israeli foreign ministry spokesman Emmanuel Nahshon, who called his death “a loss for us all and for the world”.

While Oz’s writing is widely acclaimed, he is perhaps equally known as one of the earliest and most forceful critics of Israel’s occupation of Palestinian lands captured in the Six-Day War of 1967.

In recent years, Oz spoke out against the policies of Prime Minister Benjamin Netanyahu, shunning official Israeli functions abroad in protest at what he called the “growing extremism” of his country’s government.

Netanyahu on Friday celebrated Oz as “among the greatest writers from the state of Israel”.

“Despite our diverging views on numerous issues, I have deeply appreciated his contribution to the Hebrew language and the revival of Hebrew literature,” the premier said in a statement released by his office.

Oz was described as a “literary great” by Israel’s President Reuven Rivlin.

“A tale of love and light and henceforth, great darkness,” he wrote on Twitter.

Provided by Germany’s Madrix, the advanced pixel-controlled lighting system is utilised to create a gigantic circular screen that runs from the New Taipei City Hall to the Christmas tree.

The master of best sound effects shortlisted by the Golden Horse Awards is responsible for making soundtracks for the main light shows. This year’s decorations come in a rose-golden colour to create a roman?tic atmosphere and four different colours are used in the four light zones, namely the romantic Rose Golden Star Overpass, the dream-like Pink Star Overpass, the Galaxy Star Overpass in cold-white, and the Blue Light Star Overpass.

New York artist Jen Lewin is show?casing her interactive light-and-shadow art installation at The Pool. The vivid and delicate changes of light and shadow projected from more than 40,000 light bulbs in 360 degrees go up and down with the exciting music, turning the flat 3D light sculpture into stereoscopic 3D, which surrounds the audience and subverts the imagination.

Also available is the Fantasy Planet, a giant ball-like artwork made with more than 100,000 LED lights that performs a brilliant light show from 5.30 to 10pm.

Manchester City cut Liverpool’s lead at the top of the Premier League to seven points with a 3-1 win at Southampton as Paul Pogba shone again for Ole Gunnar Solskjaer’s Manchester United by scoring twice in a 4-1 victory over Bournemouth on Sunday.

City’s shock run of three defeats in four league games has allowed the unbeaten Liverpool to close in on a first title since 1990 with the sides set to meet at the Etihad on Thursday.

But after Jurgen Klopp’s men thrashed Arsenal 5-1 on Saturday to open up a nine-point lead, the champions responded despite an early scare at St Mary’s.

“We knew it, that with the position of Liverpool, if we drop points then it is over, it is finished,” said City boss Pep Guardiola.

“It would be almost impossible. Of course they are going to drop points but not too many.”

Charlie Austin wasted a great chance to give Southampton the lead before David Silva slotted home Bernardo Silva’s cross to put the visitors in front.

However, just as in defeats to Crystal Palace and Leicester, City surrendered the lead when Pierre-Emile Hojbjerg blasted high past Ederson eight minutes before half-time.

The game swung back in back in City’s favour just before the break as James Ward-Prowse turned Raheem Sterling’s cross into his own net before Alex McCarthy couldn’t keep out Sergio Aguero’s header.

Guardiola’s men should have added to their advantage as Aguero hit the bar and McCarthy made amends by denying Gabriel Jesus.

Fernandinho had been badly missed in City’s recent defeats, but his return from injury made a huge difference in midfield and Southampton ended with 10 men after Hojbjerg was shown a straight red card for scything down the Brazilian five minutes from time.

– Pogba doubles up –

Pogba had scored just one goal from open play in the Premier League this season under Jose Mourinho, but continues to flourish since the Portuguese’s departure with his second double in four days.

“It is different, we still won games with the old manager but it is just a different style of playing, we are more offensive and we are creating more chances and that is how we want to play,” said Pogba.

The Frenchman’s opener on five minutes owed much to the brilliant skill of Marcus Rashford who dribbled beyond two Bournemouth defenders before crossing for Pogba to tap into an empty net.

Pogba then powered home a header from Ander Herrera’s inviting cross before Rashford’s outside of the boot finish put United 3-0 up.

Nathan Ake reduced Bournemouth’s deficit before half-time, but Pogba turned provider for substitute Romelu Lukaku to make it 4-1 and only the post denied Pogba a first ever hat-trick.

“That is a top, top performance for a midfield player because it’s all-round,” said Solskjaer of Pogba’s display.

Despite Solskjaer’s 100 percent record, United remain eight points off the top four as Chelsea ground out a 1-0 win at Crystal Palace thanks to N’Golo Kante’s winner.

The French World Cup winner has been encouraged by Maurizio Sarri to get into more goalscoring positions with Jorginho occupying Kante’s usual holding midfield role for the Londoners this season.

“He is improving, especially in his movement without the ball,” said Sarri.

“Today his movement was really very good and done with the right timing.”

Southampton are now above the relegation zone only on goal difference as third bottom Burnley secured just a second win in 13 games by beating West Ham 2-0.

Sean Dyche dropped former England number one goalkeeper Joe Hart to the bench for the first time in the league this season and was rewarded with a rare clean sheet as first half goals from Chris Wood and Dwight McNeil secured a vital three points.

Seven THAIS led by Gunn Charoenkul earned their Asian Tour cards after finishing in the top 35 in the final Asian Tour Qualifying School tournament in Hua Hin yesterday.

Gunn completed an unforgettable week at the Lakeview Resort and Golf Club by carding the lowest score of the day with a 61 to finish on 23-under-par 331, a stroke behind winner Austen Truslow of the United States who topped the class with a closing 65 for a total 331.

“Fifty-nine was playing on my mind today,” said the 26-year-old Thai, who spent most of 2018 playing on the Japan Tour. “After nine holes, I got a little nervous and I got a little hiccup on 10th, where I hit it into the hazard but still managed to make par. I kept going and on 15th, I put it on the back of my head that I couldn’t do it [break 60]. I’ll have to change my schedule after earning an Asian Tour card.”

India’s Aadil Bebi, the youngest player at 17 to tee up in Hua Hin, showed his mental toughness by posting a 63 to end the week tied for ninth.

After learning he had lost a close friend to a traffic accident at the start of the week, Bebi displayed maturity beyond his years by staying focused to earn his playing rights for the 2019 Asian Tour.

Sadom Kaewkanjana and 2017 SEA Games teammate Kosuke Hamamoto, a Thai-Japanese, were also among the local players to earn their Tour cards. Sadom, who last week helped Thailand beat Japan 15-13 in the Amata Friendship Cup, will now turn pro.

“I’m very excited and happy to earn my card. I’m looking to turn professional after this event, and in 2019 I hope to retain my playing rights for next season,” said the 20-year-old, who also won the All Thailand Golf Tour Q School earlier.

The other Thai graduates yesterday were Itthipat Buranatanyarat, Poom Pattaropong, Naras Luangphetcharaporn and Kwanchai Tannin.

National coach Milovan Rajevac vows to lead Thailand to win as many matches as possible in the AFC Asian Cup which starts this Saturday at the United Arab Emirates.

The Serbian coach along with his team are now already in the Middle Eastern country to prepare for continental competition where Thailand will take on India in group A on Sunday.

Rajevac is trying to redeem his pride after hus side failed to defend their title in the AFF Championship, losing to Malaysia in the semi-finals on away goal rules. Thailand must reach the round of 16 or the coach will part with the team, according to Football Association of Thailand chief Somyot Poompanmoung.

Thailand has been drawn in the same group with India, Bahrain and the UAE. Only top two teams from each of the six groups plus four best third placed teams will progress into the last 16.

“We are going to play in the best competition in Asia. We are very motivated and we are aware of the challenge. We hope to play for good outcomes,” said Rajevac, whose team will play a warm-up game with Oman behind closed doors on Wednesday.

Despite the pressure, the Serbian coach insists he is more concerned about winning matches than cautiously racking up the points his team needs to secure a second-round berth.

‘’We will try to win every match we play, as each win is important. The strongest team will be UAE as they have home advantage,” said Rajevac.

His newly selected captain, Teerasil Dangda, says the Thai players are in great mental and physical shape and all share the same target of reaching the knockout stage.

“We all desperately want to reach the second round. We will have time to adjust to the weather and conditions before Sunday,” said the 30-year-old striker, who downplayed his status as the only player in the team with Asia Cup experience.

“Although I have played in Asian Cups over the last 12 years, I haven’t helped the team much. In fact, there are several good players in the team now who have more international tournament experience than I do.”

Jurgen Klopp refused to get carried away with the growing expectation that Liverpool can lift the league title for the first time in 29 years saying his players must stay focussed after they thrashed Arsenal 5-1 on Saturday.

Roberto Firmino’s hat-trick — the first by a Liverpool player against the Gunners since Peter Crouch in 2007 —  as well as a goal apiece by Mohamed Salah and Sadio Mane ensured Liverpool’s front three all scored in the same league game for the first time this season.

It gives Liverpool a nine point advantage over Tottenham Hotspur who surprisingly slipped up 3-1 at home to Wolverhampton Wanderers and 10 over champions Manchester City, who play Southampton on Sunday.

Klopp, though, kept his feet firmly on the ground especially with a potentially title-defining clash away at Manchester City on Thursday.

“All over it was a good performance against a good opponent and our reaction (to going behind to an early goal) was just brilliant,” he told BT Sport.

Klopp said Tottenham’s loss had not affected his players at all.

“For sure Tottenham’s result people out there reacted, but not inside the dressing room where they were completely concentrated on the match and not allowed to have that influence our game.

“That is how I want the team to stay which is to be concentrated nothing else.”

Liverpool’s outstanding central defender Virgil van Dijk, who has added the solidity to a defence which was once a real weakness in the side, said they were not the finished article yet but it was a good moment to be a member of the Liverpool squad.

“We still need to improve a lot of things but we are very happy with where we are at the moment we have to keep intensity high and continue in this way,” the 27-year-old told BT Sport.

“Anything is possible. We are in a good way, it’s tough but it’s a great time to be a Liverpool player.”

Van Dijk’s fellow defender Scottish international full-back Andy Robertson said the City game had been on their minds but they had so far done the business without letting it distract them.

“(Manchester City) is a huge one,” the 24-year-old told BT Sports.

“Everyone in the squad has been looking at it.

“But in December we’ve knocked the games off one by one and we’ve now got a healthy lead. We look forward to it.”

BETONG – Mention puffer fish, and thorns and poison come to mind.

But the fish, despite a deadly toxin that it contains, is also sought after by many for its tasty flesh, cooked in a curry or spicy tamarind sauce, grilled or fried, according to Bernama news agency.

The people who cook puffer fish know how to remove the toxin, which is said to be 1,200 times more poisonous than cyanide.

One such person is 56-year-old Dari Sait (rpt) Dari Sait of Kampung Manggut, Spaoh, who claims to have been handling the yellow puffer fish from the time she was just 20.

“Removing the toxin requires the use of a proper technique. The poison is in the blood vessels. Puffer fish eggs are also delicious. The toxin is found in the egg membrane. Steaming the eggs with bamboo shoots also drains away the poison,” she said.

Dari said the yellow pufferfish is popular in the Spaoh area, where the people are experts at draining away the toxin and cooking the fish, according to their respective recipes.

She put on gloves to protect her hands against the thorns and showed this reporter how adept she was at removing the toxin in less than a minute, the news agecy reported.

According to Assoc Prof Dr Samsur Mohamad, a lecturer at the Department of Aquatic Sciences of the Faculty of Resource Science and Technology of Universiti Malaysia Sarawak (Unimas), people in Japan eat the pufferfish to feel a ‘sensation’.

“A numbness is felt after eating the fish, and people in Japan seek the numbness when eating the pufferfish,” he said.

Dr Samsur said the season of the yellow pufferfish is between April and October annually along the Batang Saribas with Kampung Manggut, Spaoh, close to the river as the point of focus.

Fresh yellow puffer fish goes for RM10 per kg, dried puffer fish at RM10 for three fish while the yellow puffer fish eggs cost RM40 per kg, he said.

Mohd Remy Husin, 32, said he catches the puffer fish twice a month during the season using a net or the traditional method of using a tool called ‘sagang’.

“When the puffer fish enters Batang Saribas, fishermen snare the fish with a net fastened in the middle of the river. During the season, up to 180 kg of catch are landed compared to only 10 kg during the off-season,” said Mohd Remy who has been catching the fish since he was 12.

He said that after the fish had laid its eggs in the Tanjung Asam area of Batang Saribas, the fish become hungry and are caught with the ‘sagang’ with the use of shark meat as bait.

Dr Samsur said studies show that the Batang Saribas area is the focus of the puffer fish because the narrow passage of the river with its many promontories offers a conducive place for the breeding of the fish.

“During the breeding season, the pufferfish from the coastal area will come up the Batang Saribas to lay their eggs, after which they return to the coastal area. We are still studying how long it takes for the fish fry to go to the coastal areas,” he said.

Brexit ’50-50′ if May’s deal voted down: British minister

Brexit ’50-50′ if May’s deal voted down: British minister

Breaking News December 31, 2018 01:00

By AFP

London – Britain’s chances of leaving the European Union are only “50-50” if MPs reject Prime Minister Theresa May’s Brexit deal, a senior minister warned Sunday.

Liam Fox, the international trade secretary and a vocal Brexit campaigner during the 2016 referendum, warned colleagues planning on voting against May that her plan was the only way to be “100 percent certain” that Britain would leave.

“If we were not to vote for that, I’m not sure I would give it much more than 50-50,” he told The Sunday Times.

May’s government is trying to persuade a sceptical British parliament to endorse a broad withdrawal deal she struck with European leaders last month.

But the bill’s passage is far from certain, with May having to pull an initial vote with a crushing defeat looking, rescheduling it for the week beginning January 14.

Pro-Brexit supporters are particularly concerned about the deal’s so-called “backstop” provision, which could keep Britain locked in a customs union with the EU in order to avoid a “hard” border between British province Northern Ireland and the Republic of Ireland.

But Fox urged his colleagues to “put their own pride behind them” and take what was on offer.

“The worst possible outcome of this process would be no Brexit,” he told the paper.

“For me that would induce a sense that we had betrayed the people that voted in the referendum.

“What you can be sure of is that if we vote for the prime minister’s deal then its 100 percent certain that we will leave on March 29.”

He also warned parliament against trying to thwart the process through a series of legislative procedures.

“Shattering that bond of trust between parliament and the people, I think, would be incendiary,” he said.
